John & Brooke's Bold Winter Wedding at Sala | House of Hydrangeas
Bright winter flowers, candlelit tables and one of the loveliest Sydney wedding celebrations House of Hydrangeas has styled to date.

The Couple
I first met John in my previous corporate life, when he joined an exclusive leadership course I was teaching. I was absolutely thrilled when he later reached out and asked me to create the flowers for his wedding to Brooke.
I loved getting to know Brooke throughout the planning. She had a clear vision, but she was also an amazing collaborator. We communicated through email, Instagram, WhatsApp and Google Meet. Every time she visited Sala, she sent me more photographs and videos so we could work through the space together.
We kept refining the colours, flower choices and placement until everything felt right. It was a very collaborative process, and by the time the wedding arrived, I felt as though I really understood what Brooke wanted.
The Vision
John and Brooke wanted bright, joyful wedding flowers with a garden-inspired feel. As the design developed, the palette became bolder, with more pink and purple introduced throughout.
Brooke wanted her bridal bouquet to feel colourful and abundant, with plenty of dahlias. Her bridesmaids wore rose-coloured dresses and carried smaller, rounder bouquets in the same palette. Brooke's bouquet was finished with flowing pastel ribbons, including a periwinkle blue ribbon as her "something blue".
For the reception at Sala, we planned seven compote arrangements for the dining tables, with additional bud vases placed among the lamps, candles and table runners supplied by John and Brooke.
Downstairs, larger reception flowers filled the couple's own urns around the entrance, bar and lounge areas. Brooke's site-visit videos were invaluable here, letting us plan each floral moment at Sala properly before I arrived on the day.

In Bloom
Styling this wedding meant a trip to the Sydney Flower Markets. We were trying to create the feeling of spring in the middle of winter, so I wanted to see what was available and choose the flowers in person.
The final wedding flower recipe included dahlias, roses, spray roses, lisianthus, stock, tulips, carnations and sweet peas. Dusty miller added softness, while trailing amaranthus gave the larger arrangements plenty of movement.
The palette ran through peach, coral, blush, pink, lilac and purple, with touches of ivory and green. It was bright, romantic and full of colour, exactly what Brooke had asked for in her winter wedding flowers.

The Day
I drove to Sydney on the morning of the wedding and delivered the personal flowers to The Star. I then checked into The Woolstore in Pyrmont before heading to Sala to set everything up.
The weather could not have been more perfect: 19 degrees, sunny, without a touch of wind. John and Brooke were married at the Pyrmont Registry Office before heading to Sala to celebrate.
Once the candles and lamps were on, the reception looked beautiful. The bright wedding flowers stood out against the darker interior at Sala, while the candlelight made the long dining tables feel warm and inviting.
I had been given a green room to use as my flower base for the evening. It also contained a bathroom, so it became a very popular place. It ended up being a great opportunity to chat with guests, meet more of the family and hear lovely comments about the flowers throughout the night.
John and Brooke were incredibly attentive all evening, checking that I was comfortable, had eaten and had everything I needed, even with an entire room of people there to celebrate them. They also gave each vendor a gift chosen especially for them at the end of the night, a completely unexpected and beautiful gesture.

The Moment
I was nervous about Brooke's bouquet. After everything she had shared with me during the planning, I really wanted to get it right.
When she arrived at Sala, she smiled and pushed the bouquet towards me. I knew immediately that she loved it, and I could finally relax.
John later told me he had asked Brooke whether it was what she had envisioned. She said: "Absolutely! Especially the big purple one in the middle. It looked unreal!"
The big purple flower was a dahlia, and it was exactly the reaction I had hoped for.
After John and Brooke's first dance, I began collecting the reception flowers and wrapping them into take-home bouquets for guests. The wrapping service was a hit. Guests loved choosing their own flowers, and it was lovely seeing everyone leave with an armful of blooms rather than having them left behind.
